Phytase (myo-inositol hexakisphosphate phosphohydrolase) is every type of phosphatase enzyme that catalyzes the hydrolysis of phytic acid. It is an enzyme which breaks down phytate and enhances calcium (Ca), zinc (Zn), sodium (Na), magnesium (Mg) and amino acid availability and digestibility in broilers and pigs. Phytases fall into two main categories:

• Fungal phytases, from Aspergillus or Peniophera species
• Bacterial phytases, from Escherichia coli
