Introduction
Nisin is prepared by fermentation of a food grade bacterium “Lactococcus lactis”. It is a polycyclic antibacterial peptide and commercially finds its application as a food preservative. It is a natural food preservative which has 34 amino acid residues, including the uncommon amino acids lanthionine (Lan), methyllanthionine (MeLan), and didehydroalanine (Dha). It is widely used in processed foods, juice, dairy products, meat and canned foods to increase the storage life of the foods. It is effective across a pH range of 3.5-8, and also termed as safe by many independent authorities across different countries, including FDA, and WHO. Also nisin is effective against the wide spectrum of gram-positive and gram-negative bacteria. The gram-positive bacteria are some sort of contamination in brewery industry. Thus usage of nisin, can eliminate 90% of gram positive bacteria. Because of the growing demand of customers, new developed projects are initiated with special treatments like maintain the taste of foods and many others.
Market Dynamics
Nisin is gaining wide interest in the food industry with respect to its feasibility in various applications such as dairy, meat/poultry, beverages, fruits and vegetables, etc. The nisin is effective against wide spectrum of gram-positive and gram-negative bacteria, which is one of the key factors driving the growth of this market. In addition, nisin has bacterial killing properties because of its surface active molecules nature which can effortlessly bind with several compounds. It is also known for acting as important antimicrobial agent in the active packaging. Hence, with the growing adoption of active packaging also plays a vital role to drive the market. Another major challenge in the nisin market growth is its high cost in manufacturing segment i.e., maintaining natural preservative is very costlier than chemical preservatives. These factors are effecting the growth of the nisin market. Nonetheless, extending lifespan without altering the taste, reduced processing temperatures, easy to use and natural way to safeguard the food items are some other factors which are contributing to the market. From most of the independent authorities have declared nisin as safe in terms of food safety, such as European Food Safety Authority, WHO, FD
